Was in the mood to make a late night meal after getting home well past dinner tonight, but wanted something fast and easy. I sautéed some organic baby bok choy, organic red onion, and a little bit of organic spinach and kale in coconut oil and garlic….boiled some organic brown rice pasta, and stirred the two together in a hot pot with organic olive oil, salt and pepper. DONE. Quick and oh so tasty.
